A recipe for blueberry muffins from the Food Network requires fresh blueberries, all-purpose flour, baking powder and sugar. It also uses unsalted butter, egg, whole milk and granulated brown or white sugar. Preparation time is 12 minutes, and cook time is 25 minutes.
Preheat oven to 350 F, and coat a 12-cup muffin pan with grease. Pour 2 cups flour, 2 tablespoons baking powder, and 1/2 cup sugar in a bowl, and set aside. Place 1 stick melted butter, 1 slightly beaten egg and 3/4 cup milk in a separate bowl, and stir thoroughly. Using a spatula, add the wet ingredients to the dry ingredients. Mix carefully, and do not beat every lump out of the batter. Slowly add 1 1/2 cups blueberries to the bowl.
Scoop the mixed batter into the muffin pan so that each cup is 2/3 full. Cook for 10 minutes, and remove the muffins from the oven. Cover the muffin tops with 1/2 cup brown or white sugar. Place the muffin pan back in the oven. Bake for another 10 to 15 minutes or until the muffin tops turn brown. Let cool for approximately 10 minutes, and then take the muffins out of the pan.
