Make 30 minute meatloaf by combining half of a 15 1/4 ounce can of Hunt's seasoned tomato sauce for meatloaf, 2 tablespoons of firmly packed dark brown sugar and 2 tablespoons of chopped fresh parsley in a small bowl, and set it to one side for topping.
In a medium bowl, thoroughly blend 2 pounds of ground beef, 2 beaten eggs, 1 cup of dry unseasoned bread crumbs, 1/2 teaspoon of salt and 1/2 teaspoon of ground black pepper. Form the mixture into 8 even oval loaves and put them in a 13 by 9-inch baking pan. Bake uncovered at 400 F for 15 minutes, top with sauce, and bake an additional five minutes.
For old-fashioned meatloaf, mix 1 pound of ground beef, 1/2 cup of chopped onion, 1/2 cup of chopped bell pepper, 1 lightly beaten egg and 8-ounces of canned diced tomatoes with the juice. Add 1 1/4 teaspoons of salt, 1/4 teaspoon of ground black pepper and 1/4 cup of quick-cooking oats. Blend the mixture thoroughly, form into a loaf, and place in a baking pan.
Make the topping by mixing 1/3 cup of ketchup, 2 tablespoons of brown sugar and 1 tablespoon of prepared mustard. Spread the topping on the loaf, and bake it for 1 hour at 375 F.Learn more about Meat
