Some tasty low-carb dishes that you can make quickly and easily include baked meatballs and poached Pacific sole with capers and chives. A low-carb eating regimen helps you reduce the calories in your diet.
To make baked meatballs, cook half of a large chopped spring onion or scallion over high heat for five minutes and then add 1 1/2 teaspoons of minced garlic and cook for another minute. Put in a bowl and mix with 1/2 pound of ground veal, 1/2 pound of ground pork, 1/2 pound of lean beef, 1/2 cup of grated Parmesan cheese and 2 large eggs. Season with 1/2 teaspoon of salt and 1/4 teaspoon of ground black pepper. Roll into meatballs the size of golf balls and place in an oven pan. Bake at 375 degrees for 20 to 30 minutes until cooked through.
For the sole dish, heat 3/4 cup of dry white wine in a large pan and add 1 pound of sole fillet cut in pieces about the size of the spatula. Drizzle with olive oil and add 1/4 teaspoon of salt and 1/8 teaspoon of pepper. Sprinkle with 2 tablespoons of capers and cook for about four minutes or until the sole begins to flake. Remove from the pan and sprinkle with 2 tablespoons of chopped chives to serve.
