Two quick and easy pumpkin desserts are pumpkin mousse parfaits and pumpkin spice bars. These treats are perfect for autumn, and both desserts can use either fresh or canned pumpkin.
To make pumpkin mousse parfaits, bring 1 envelope of gelatin and 1/4 cup of dark rum to a simmer in a sauce pan. Combine 8 ounces of pumpkin, 1/2 cup each of granulated and brown sugar, 2 extra-large egg yolks, and 2 teaspoons of grated orange peels in a large mixing bowl. Add hot gelatin and sprinkles of cinnamon, nutmeg, and salt until the mixture is well-blended.
Beat 1 1/2 cups of heavy cream and 2 teaspoons of vanilla extract until the cream thickens. Fold half of the cream into the pumpkin bowl. In 12 small glasses, layer the pumpkin mixture, whipped cream, and crushed gingersnap cookies until each glass is full.
For pumpkin spice bars, combine 2 cups of Bisquick, 2 cups granulated sugar, 1/2 cup of vegetable oil, 8 ounces of pumpkin and 4 beaten eggs. Mix in 1 teaspoon of baking soda, 2 teaspoons of cinnamon, and 1/2 cup of raisins. Pour the mixture into a baking dish, and bake 350 degrees Fahrenheit for 30 minutes. Allow the cake to cool, then top with cream cheese frosting before cutting the cake into thick bars.
