The Food Network recipe only requires the juice of 1 lemon, 2 tablespoons of olive oil,
3 cloves of minced garlic, 1 tablespoon of crushed black peppercorns, salt and 4 skinless and boneless chicken breasts.
In a shallow glass baking dish, combine the fresh lemon juice with olive oil, garlic and crushed peppercorns. Mix the ingredients together with a fork. Place the chicken breasts in the baking dish, and turn several times to coat the chicken with the mixture. Allow the chicken to marinate for 30 minutes.
The Epicurious recipe includes 1/3 cup of orange juice, 1/4 cup of lime juice, 1/4 cup of ground pasilla chiles, 2 tablespoons of ground ancho chiles and 1 tablespoon of minced, canned chipotle chiles. Also required are 6 crushed garlic cloves, 1 chopped onion and about 3 pounds of halved chickens with the backbone removed.
Whisk the oil, orange and lime juices. Add the ground chiles, canned chiles and garlic in a baking dish to blend. Mix in the chopped onion, and add chicken halves to the mixture. Turn the chicken halves frequently to ensure they are coated in the marinade. Cover and refrigerate the chicken halves for at least four hours, turning occasionally.Learn more about Cooking
