Food Network offers a Brunswick stew recipe featured on the “Old Time Attitude” episode of its show, “Diners, Drive-Ins and Dives.” The stew is easy to make and yields 20 or more servings. The recipe is from the Southern Soul Barbeque in Saint Simmons Island, Georgia.
To make Brunswick stew using Southern Soul Barbeque's recipe, melt 1/2 pound of salted butter over medium heat in a large saucepan. Add 3 cups of finely diced sweet onions and 2 tablespoons of minced garlic, sauteing for around 15 minutes or until the onions turn translucent. Stir in 1 teaspoon of cayenne pepper, 1 tablespoon freshly ground black pepper, 1 tablespoon salt and 1/4 cup Worcestershire sauce. Simmer for five minutes, and then add 1/2 cup each barbecue sauce and vinegar sauce.
Stir in 1 pound of smoked pulled pork, 1/2 pound each smoked pulled chicken and turkey, and 1 pound of smoked chopped beef brisket. Add 1 number-10 can of crushed tomatoes and 1 quart each drained corn kernels, drained baby lima beans and quality chicken broth or stew. Simmer the mixture for two more hours over medium heat, and then transfer the stew into a serving bowl. Serve the stew with warm buttermilk cornbread.
