To make slow cooker salsa chicken, put raw, thawed chicken thighs, a jar of salsa and a can each of drained corn and black beans in a slow cooker. Optionally, brown the chicken in a skillet before adding to the slow cooker with a little olive oil and salt. Start the cooking process in the morning before work, and cook on low for at least 7 hours, and serve in the evening with rice or tortillas.
For vegetable stir fry, heat 2 tablespoons of olive oil, and cook desired meat for 2 minutes, then add in sliced vegetables. Some vegetables to choose from include bell peppers, onions, cabbage and carrots. Cook until meat is done and vegetables are at desired softness, then add in 1 tablespoon of soy sauce any other flavorings, such as garlic powder. Serve.
Slice zucchini and any other vegetables into thin circles or crescents, along with 1 clove of garlic. Brown boneless, skinless chicken breasts in a skillet on both sides, then add to a 400 degree Fahrenheit oven for 8 minutes. Add prosciutto to the skillet, and cook for 2 minutes before removing it to make room for the vegetables. Sauté vegetables until done, then assemble dish, and serve.
