Coat your chicken pieces in the egg mixture, and then press them into the cereal, ensuring that they are completely coated. Cook and stir the chicken in hot oil and butter over medium heat for about 7 minutes, checking when the coating turns golden brown. Whisk 1/2 cup apricot preserves and water over medium-low heat for two to three minutes until smooth, and serve the sauce with the chicken nuggets.
