First, preheat the oven to 350 degrees Fahrenheit or 175 degrees Celsius. In a mixing bowl, peel and mash two or three ripe bananas until smooth. Stir 1/3 cup melted butter into the mashed bananas.

Add 1 teaspoon baking soda and a pinch of salt and mix. Beat one egg, and add it to the bananas along with 1 cup sugar, 1 teaspoon vanilla extract and 1 1/2 cups flour. Mix well.

Pour the batter into a buttered 4-by-8-inch loaf pan. Bake it at 350 degrees Fahrenheit for 60 to 70 minutes. After 50 minutes check with a toothpick inserted into the center of loaf. It should come out clean.

Take the loaf out of oven, and let it cool on a rack. After the banana bread is cool remove it from the pan and slice. If a less sweet banana bread is desired the sugar can be reduced by 1/4 or 1/2 cup. Add chopped nuts to make banana nut bread. Chocolate lovers may even want to add chocolate chips.
