To prepare a T-bone steak in the oven, put the steak in a pan, and later transfer it into an oven, where it finishes most of the cooking process. Add any black pepper at the end to prevent burning.
Start the preparation process by positioning the oven's top rack 5 inches from the top. Remove the steak from the refrigerator, and allow the broiler to heat up to its maximum temperature. Open a window or turn on an exhaust fan to allow any smoke to vent. Preheat a grill pan or cast-iron skillet on high for about five minutes, and add oil to the surface being used. Oil is not needed if the pan is already seasoned. Place the cut in the pan, and add a light amount of salt.
Transfer the pan to the oven on the top rack. Allow the steak to broil for four minutes before flipping it over and giving the other side another four minutes. Once both sides have been broiled, remove the pan from the oven. Make a cut to check how well done the meat is. Return it to the broiler to cook more if necessary. Put the steak on a plate for about five minutes, and cover it with aluminum foil to keep it warm.
