To make a basic cheese sauce, toss 8 ounces grated extra sharp cheddar cheese with 1 tablespoon of cornstarch, then combine the cheese and 2 teaspoons of hot sauce (if desired) with 12 ounces of evaporated milk in a saucepan on low heat, and cook until the mixture is smooth. If necessary, add additional evaporated milk to the cheese sauce to reach the right consistency. Another option includes adding shredded pepper jack to make an even spicier cheese sauce
To make a white cheese sauce, blend a white cheese with 1 chopped shallot and 1 clove of minced garlic that have been cooked in 1 tablespoon of olive oil over medium heat. When cooking, wait until the shallot turns translucent, then add 1 of cup milk and bring the milk to a simmer. Next, add 1 cup of shredded cheese, 1 tablespoon of mayonnaise and 1/4 teaspoon of chili powder to the milk, stir well to combine the ingredients, and continue cooking until the cheese melts.
Alfredo sauce is another option. In a saucepan on low heat, combine 1/2 cup of milk, 2/3 cup of mayonnaise and 1 clove of minced garlic, then simmer for five minutes or until the mixture thickens slightly. Add 1/3 cup of grated Parmesan cheese and 2 tablespoons of freshly chopped parsley to the sauce. Remove from heat when the cheese begins to melt.
