Prepare pumpkin bread pudding with French bread, half-and-half, pumpkin puree, spices and a few additional ingredients. This recipe takes about an hour to prepare and serves about eight people.
To make the bread pudding, first grease an 11-inch by 17-inch baking dish and preheat your oven to 350 degrees Fahrenheit. Next, tear about 8 ounces of French bread into tiny chunks and set them aside in a covered bowl.
In a different bowl, combine three large slightly beaten eggs, 2/3 cup of granulated sugar, 2/3 cup of brown sugar, a 15-ounce can of pumpkin puree, 1 cup of dried cranberries, 3 tablespoons of melted butter, spices (such as cinnamon, nutmeg and ginger) and 1 teaspoon of vanilla, and stir until well-combined.
After this, pour the pumpkin mixture over the bread chunks and stir until the bread is evenly coated. Next, pour the bread mixture into the baking dish. Sprinkle with a dash of cinnamon sugar. Bake the bread pudding about 45 to 60 minutes or until the bread is golden brown on top. This pumpkin bread pudding can be served with vanilla ice cream, whipped cream or brown sugar sauce.
To make the brown sugar sauce, combine brown sugar, corn syrup, butter, heavy cream and vanilla in a saucepan. Bring it to a boil over medium heat while stirring frequently. Let it cook for about five minutes, and then let it cool.
