Prepare ground beef casserole with egg noodles, ground beef, cheddar cheese, sour cream and a few additional ingredients. This recipe takes about 55 minutes to prepare and serves four to six people.
To prepare the casserole, preheat the oven to 425 degrees Fahrenheit and butter a 2-quart baking dish. Boil a large pot of lightly salted water and cook the egg noodles to the package directions. Drain the noodles and place them in the baking dish. Stir in the sour cream, Parmesan cheese and salt until the noodles are evenly coated.
Heat the olive oil in a large saucepan over medium-high heat. Cook the ground beef for about four minutes or until it is entirely cooked through. Chop the bell pepper and scallions and add them into the beef and cook until soft. Add the tomato paste and seasonings and cook for about 60 seconds. Add the diced tomatoes, and let this mixture simmer for about two minutes, stirring frequently.
Pour the beef over the noodle mixture, then add the grated cheddar cheese over the top of the casserole. Bake for about 15 to 20 minutes or until the cheese is bubbling. Remove the casserole from the oven and let it cool for about 10 minutes before serving.
