Prepare drinks using chia seeds by soaking the seeds in liquid until they expand and turn gelatinous and then adding juice or sweeteners to the mix. Add lemon or lime wedges to the drink for garnish and extra flavor.
In order to make the classic chia fresca drink requires drinking water, lemons, sugar or another type of sweetener and chia seeds. First, make the basic component of the drink or the lemon-water, which requires 4 lemons for an entire pitcher. Roll the lemons firmly and repeatedly over a hard surface to help release the juices. Cut each lemon in half, squeezing it into a pitcher holding 48 ounces of water. A total of 12 tablespoons of juice are required, although this can be increased to make it stronger. Stir in 1/4 cup of sugar or alternative sweetener such as Splenda. To use Stevia, add a dropper full of the liquid sweetener. Make sure the sweetener is completely dissolved before adding the chia seeds.
Add 2 tablespoons of fresh chia seeds, stirring it into the drink. It takes about 10 minutes for the chia seeds to absorb the water. During the process, keep stirring the drink to keep the seeds from settling on the bottom. Chill, and serve the drink, adding mint leaves as garnish.
