Emeril Lagasse has a recipe for oven-barbecued baby back ribs. The recipe has a preparation time of 20 minutes, a cook time of 1 1/2 hours, and serves up to four people. McCormick provides a recipe for chipotle cinnamon baby back ribs.
To prepare barbecue ribs in the oven, combine 2 cups ketchup, 1/2 cup brown sugar, 2 tablespoons white vinegar, 2 tablespoons minced onions and 2 tablespoons of minced garlic in a large bowl. Stir, then add 2 teaspoons dry mustard, 2 teaspoons cayenne, and salt and pepper. Place ribs in a roasting pan, season with additional salt and pepper, and brush mixture on a 4-pound rack of baby back ribs. Place ribs in an oven preheated to 325 degrees Fahrenheit. Cook ribs for 1 1/2 hours; baste ribs with mixture every 30 minutes.
To prepare chipotle baby back ribs mix together 1/4 cup brown sugar, 1 tablespoon chili powder, 2 teaspoons chipotle chile pepper, 1 teaspoon cinnamon, 1/2 teaspoon garlic powder and 1/2 teaspoon salt. Rub mixture onto 3 pounds of baby back ribs, place ribs into a foil-lined roasting pan, and put into an oven preheated to 375 degrees Fahrenheit. Pour 1/4 cup water over the ribs, and bake for one hour. Then brush ribs with 1/2 cup of maple syrup. Broil or grill ribs for three to five minutes to brown them.
