Potatoes cut for French fries should soak in water for at least 2 hours and up to overnight. Soaking the potatoes before frying helps to remove a good amount of the starch inherent to the potatoes, such as russet potatoes, as well as some of the sugars that prevent the French fries from getting crispy.
There are just a couple of steps necessary to take before deep frying the potatoes.
Step 1: Gather materials
Get everything together needed to cut and soak the potatoes, including a peeler, knife, cutting board and large bowl.
Step 2: Prep the potatoes
Peel the potatoes and cut them into the width and length of French fries that are desired.
Step 3: Soak the potatoes
Add the potatoes to a large bowl and cover completely with cold water. Allow the potatoes to soak for up to 3 hours. Place the bowl in the refrigerator if the potatoes have time to soak overnight.
Step 4: Drain the potatoes
Drain the potatoes in a colander and pat them dry with paper towel. This keeps the potatoes from spattering in the hot oil when beginning to fry them.
