Potatoes au Gratin is a French dish made with thinly sliced potatoes, layered between a cream based cheese sauce. It is topped with cheese and breadcrumbs and baked in an oven until golden brown.
To make Betty Crocker's version, slice 6 medium potatoes into 1/8 inch slices. Melt 1/4 cup of butter. Saute 1 medium chopped onion until tender and stir in 1 tablespoon of flour, 1 teaspoon of salt and 1/4 teaspoon of pepper. Cook until mixture becomes bubbly, stirring constantly.
Pour in 2 cups milk and 1 1/2 cups shredded cheddar cheese. Continue to stir and allow mixture to come to a boil.
In a greased 1 1/2 quart baking dish, spread potatoes evenly. Pour over cheese mixture.
Bake at 350 degrees for one hour. Combine 1/2 cup of shredded cheddar cheese with 1/4 cup of breadcrumbs. Sprinkle paprika to taste and continue baking until golden brown.
