Potato soup consists of bacon, carrots, celery, russet potatoes, chicken or vegetable broth, milk and a few other ingredients. This recipe serves 12 people and takes one hour and 25 minutes to prepare.
To make the potato soup, put the bacon pieces in a large soup pot and cook until crisp. Remove the bacon and pour out most of the grease. Over medium-high heat, add the carrots, celery and onions and cook for about two minutes. Add in the diced potatoes and cook for about five minutes. Season with Cajun spice and salt and pepper. Pour in your preferred broth and bring the mixture to a boil. Cook for about 10 minutes until the potatoes start to get tender. Stir together the milk and flour and pour into the soup, allowing it to cook for five minutes.
Now remove half of the soup and blend in a blender until smooth. Be sure to let the soup cool for 5 minutes before blending. Pour the mixture back into the soup and stir. Heat the soup back up, adding salt and pepper if needed. Stir in the cream and parsley. The soup is now ready to eat. Serve it in bowls garnished with bacon pieces and cheddar cheese.
