Ghee is clarified butter with the milk fats removed and is simple to make at home in a skillet. Ghee is dairy free and often tolerated well by people who are lactose intolerant.
To make ghee at home, simmer grass fed butter over low heat until it bubbles and foams. Eventually it will begin to brown and the milk fat will clump up and sink. Strain the milk fats out and the golden liquid left behind is the ghee.
Ghee stores well in a glass jar on the counter top or in the refrigerator. It works just like butter and is perfect for grilling, sauteing and eating fresh on toast or vegetables.
