To make traditional sugar cookies, gather 1 cup softened unsalted butter, 1 1/2 cups granulated sugar, 1 egg and 2 3/4 cups flour. This recipe also uses 1 1/2 teaspoons pure vanilla extract, 1/2 teaspoon no-color almond extract and 1 teaspoon salt. In a bowl, cream the butter and sugar until mixture is light and fluffy. Add the eggs, vanilla and almond extracts, and beat well. In a separate bowl, combine the flour and salt, and then stir the dry ingredients into the butter mixture, 1 cup at a time, mixing after each addition.
Shape the dough into two balls. On a floured surface, roll each ball into 1/8-inch-thick rounds, and cut into shapes using a floured cookie cutter. Bake for six to seven minutes at 400 degrees Fahrenheit on ungreased cookie sheets.
