To make Southwest Breakfast Burritos, first saute 2 pounds of ground turkey in a pan with 1 tablespoon of vegetable oil. When the turkey is broken apart, add 1 can pinto beans, 2 tablespoons taco seasoning mix and 1 cup green enchilada sauce. Stir over heat until the turkey is cooked through. In a separate pan, scramble 6 eggs. Next, cook 2 pouches of Uncle Ben's Whole Grain Brown Ready Rice according to package instructions, and set it aside. Gently warm 8 10-inch tortillas. In each tortilla, layer together rice, eggs and the turkey mixture. Top with cheddar cheese, and roll into a burrito.
For Old-Fashioned Rice Pudding, cook 1/2 cup Uncle Ben's Original Converted Rice in 1 1/3 cups water with 1/2 teaspoon salt. Once all the water is absorbed, add 2 cups milk and boil for about 5 minutes, until the mixture thickens. In a bowl, combine 2 eggs, 1/2 cup sugar and 1 teaspoon vanilla extract. Add the rice and milk, stirring to combine. Pour the mixture into a greased 1 1/2 quart casserole dish and add 1/4 cup raisins, nutmeg and cinnamon if desired. Place the casserole dish in a pan with about 1 inch of hot water. Bake at 350 degrees Fahrenheit for 45 to 50 minutes.
