Prepare a batch of herb turkey seasoning by mixing together 1/4 cup of olive oil, 1 tablespoon of Worcestershire sauce, 1 tablespoon of white wine and 1 tablespoon of balsamic vinegar. Add in 4 teaspoons of chopped fresh rosemary, 4 teaspoons of chopped fresh thyme, 4 teaspoons of minced onion, 4 teaspoons of minced garlic and 2 teaspoons of salt. Use the seasoning immediately, or store it in the refrigerator.
Make a zesty turkey rub by whisking together 1/4 cup of salt, 1/4 cup of onion powder, 1 tablespoon of ground oregano, and 2 tablespoons each of garlic powder, red pepper flakes and paprika. Another spicy seasoning calls for grinding together 25 whole bay leaves, 3 tablespoons of Creole seasoning, 1 tablespoon each of dried thyme and dried oregano, 2 teaspoons of garlic power and 1 1/2 teaspoons of black pepper.
To make the citrus-rosemary turkey rub, place 1/4 cup of fresh rosemary leaves, 8 garlic cloves, zest from 1 orange and 1 lemon, and 2 tablespoons of fresh thyme in a food processor, and blend it to a fine powder. Finally, blend in 1 tablespoon of lemon or orange juice, 1 tablespoon of olive oil, 1 teaspoon of salt and 1 teaspoon of pepper.
