To make Paula Deen's collard greens, boil 1/2 pound of smoked meat in 3 quarts water with 1 tablespoon House seasoning (4 parts salt, 1 part black pepper, 1 part garlic powder), 1 tablespoon seasoned salt and 1 tablespoon hot red pepper sauce. Cook this over medium heat for 1 hour.
Wash 1 large bunch collard greens and remove the stems. Stack the leaves together, roll them up and slice them into strips. Place the greens in the pot with the meat, and add 1 tablespoon butter. Cook this for 45 to 60 minutes. Season the greens to taste before serving them.
