To begin the recipe, chop 12 slices of hickory-smoked bacon, 2 medium-sized sweet onions and 6 garlic cloves into fine pieces, and chop 3/4 pound of smoked ham into chunks. Wash and trim the fresh collard greens from three 1-pound packages, and set them aside. Cook the bacon pieces over medium heat in a large stockpot until they begin to crisp, around 10 to 12 minutes. Add the onion before saut��ing an additional eight minutes, and add the garlic and ham before saut��ing for one more minute.
Stir in three 32-ounce cans or containers chicken broth, 1/3 cup apple cider vinegar, 1 tablespoon sugar, 1 teaspoon salt and 3/4 teaspoon black pepper. Simmer for an additional two hours or until the greens are tender. For a spicy variation, add some ground red pepper, and feel free to garnish the dish with hard-boiled eggs or chopped green onions. Turnip greens or mustard greens can substitute the collard greens, and the cook can add white beans to the recipe for a heartier version.Learn more about Cooking
