To begin the recipe, chop 12 slices of hickory-smoked bacon, 2 medium-sized sweet onions and 6 garlic cloves into fine pieces, and chop 3/4 pound of smoked ham into chunks. Wash and trim the fresh collard greens from three 1-pound packages, and set them aside. Cook the bacon pieces over medium heat in a large stockpot until they begin to crisp, around 10 to 12 minutes. Add the onion before sautéing an additional eight minutes, and add the garlic and ham before sautéing for one more minute.
Stir in three 32-ounce cans or containers chicken broth, 1/3 cup apple cider vinegar, 1 tablespoon sugar, 1 teaspoon salt and 3/4 teaspoon black pepper. Simmer for an additional two hours or until the greens are tender. For a spicy variation, add some ground red pepper, and feel free to garnish the dish with hard-boiled eggs or chopped green onions. Turnip greens or mustard greens can substitute the collard greens, and the cook can add white beans to the recipe for a heartier version.
