The specific recipe for this version of the cabbage soup diet is to take 1 cup each of diced carrots, celery and onions and one diced medium bell pepper, and sauté the vegetables in 2 tablespoons of olive oil. When the vegetables are tender, add in two to three cloves of minced garlic and 4 cups of chicken broth. Stir in a 14-ounce can of diced seasoned tomatoes and half a head of chopped cabbage. Add a teaspoon each of oregano and basil and 1/2 a teaspoon of red pepper flakes for flavoring. Salt and pepper can also be added to taste. Cook everything until the cabbage is tender. Cabbage soup may be eaten as much as the dieter would like.
The soup keeps up to 3 days in the refrigerator, and this recipe makes enough for one person to eat over the course of the diet. Adding additional water to the soup is acceptable, as is substituting chicken bouillon cubes for the chicken broth.
