To make chocolate-covered peanut butter Ritz sandwiches, spread 1/2 tablespoon of peanut butter on a Ritz cracker and top with another cracker. Dip the peanut butter Ritz sandwiches into chocolate or white almond bark that has been melted in a double boiler or microwave. Once fully coated, transfer the chocolate-covered peanut butter Ritz sandwich to a surface lined with wax paper. Allow to cool, and then store in an air-tight container. For 50 cookies, use 100 Ritz crackers, 1 1/2 cups of peanut butter and 24 ounces of chocolate.

For 40 cookies, use 80 Ritz crackers, 3/4 cup of creamy peanut butter, 3 14-ounce bags of white chocolate candy melts and 1/3 cup of miniature M&M's.
