Some popular recipes from the "Today" show are fabulous French toast, spicy one-pot chili and roasted chicken thighs with risotto. There is also a collection of five-ingredient desserts such as free-form wild blueberry pie.
Make one-pot chili by browning 1 pound of hamburger in a large pot with 1 chopped onion and some oil. Stir in 2 chopped bell peppers. Once the peppers soften, add 1 can of whole tomatoes, 3 tablespoons of chili powder, 1 tablespoon of dried mustard, 2 beef bouillon cubes and 1 tablespoon of sugar. Mix in the juice from 1 lemon, salt to taste and 2 teaspoons of cumin. Finish by pouring in 1 splash of red wine, 1 can of beer and 28 ounces of water. Simmer two hours, add 1 can of red kidney beans, and cook for another 30 minutes.
To put together a five-ingredient wild blueberry pie, combine 2 cups of all-purpose flour, 1 tablespoon of sugar and 1 teaspoon of salt in a food processor, and blend. Add 1 cup of cold unsalted butter in chunks and ice water until dough forms, then press the dough into a disk, cover with plastic wrap, and refrigerate for 20 minutes. Combine 3 cups of frozen blueberries and 1/3 cup of pie filling enhancer in a bowl. Roll out the dough into a circle, place on a baking sheet, and add the blueberry mixture. Fold up the edges of the dough, and bake the pie at 350 degrees Fahrenheit for 35 minutes.
