Two popular recipes of Newfoundland are Jiggs Dinner and fish and brewis. Fish and brewis consists of salted cod fish and hard bread served with pork scrunchins. Jiggs Dinner is prepared by boiling corned beef, carrots and greens, to which pease pudding, dough balls and pickled beets are added.
To make fish and brewis, one must first soak the salted fish and hard bread in water overnight. The next day, in separate pots, boil the fish for about 20 minutes and the bread for about 5 minutes. Next, saute the scrunchins and onions in a skillet until brown. As a last step, combine all the ingredients in a large pot, and season the fish as desired.
A popular recipe for Jiggs Dinner includes soaking 3 pounds of corned beef overnight. Drain the corned beef the next day, and place it in a Dutch oven with fresh water. Next, bind 1 1/2 cups of peas in a cheesecloth, and place the cheesecloth into the Dutch oven to prepare the pease pudding. After 2 hours of cooking, add the turnip, carrot and cabbage to the pot, and simmer for 25 minutes. Prepare dough balls by mixing 1 1/2 cups of flour, 3/4 cups of water, 2 teaspoons of baking powder and 2 teaspoons of sugar together in a bowl. Divide the dough into 6 balls, and steam them on top of the vegetables. Lastly, add butter to the peas from the cheesecloth bag, and present all the ingredients on a warmed platter.
