The Spanish beef couscous recipe calls for 1 cup of uncooked couscous, 1 teaspoon of salt, 1 pound of lean ground beef, 1/2 cup of finely chopped onion and 1 tablespoon of minced garlic. Also gather 1 teaspoon of ground cumin, 1/2 teaspoon of dried thyme, 1 cup of beef broth, 1/2 cup of sliced green olives, 1 diced small green pepper and 1 juiced lemon.

While the couscous cooks, heat a large skillet and add the onion, green pepper and beef, sauteing until the beef is no longer pink and is evenly brown. Add the garlic, cumin, beef broth, olives and thyme, and bring the ingredients to a boil before turning the pan down to low.
Simmer until the broth is reduced before stirring in the lemon juice. Fluff the couscous with a fork, and place it on a platter with the beef mixture to serve.
