To prepare the gravy, heat a large cast-iron skillet on medium to high heat. Add 12 ounces of pork sausage to the heated skillet, and cook until well-browned and completely cooked. Break the sausage up with a wooden spoon as it cooks, and stir occasionally. The pork sausage takes approximately seven minutes to completely cook. When done, remove the sausage with a slotted spoon, and set aside in a bowl.
Leave the rendered pork fat in the skillet. After removing the sausage, whisk 2 tablespoons of all-purpose flour into the skillet, and cook for one minute. Continue to stir the mixture with a whisk as it cooks. After the flour mixture is cooked, whisk in 2 cups of milk, and bring the skillet to a boil.
