Rachael Ray’s most popular baked pasta dish on FoodNetwork.com is tomato, basil and cheese baked pasta. Boil 1 pound small shell pasta al dente. Add 2 tablespoons extra-virgin olive oil to a saucepan over medium heat. Saute 3 minced garlic cloves and 1/2 diced yellow onion until browned. Stir in 1 28-ounce can crushed tomatoes and bring to a simmer. Reduce heat to low and then add 1/2 cup torn basil leaves, salt and pepper.
Heat the broiler to high and center the oven rack. Drain the pasta and add it to a casserole dish. Toss it with 1 cup basil pesto, 1 cup ricotta and a handful of shredded parmesan. Pour the tomato sauce over the pasta. Top with 1/2 pound of shredded mozzarella. Cook under the broiler for three to five minutes.
