To make chicken tortilla soup, cook 1/4 cup of flour in 1/4 cup of butter over medium heat for three minutes, stirring often. Gradually pour in 3 cups of chicken broth, and whisk in 1 cup of milk. Reduce the heat to low, and stir in 8 ounces of cubed Velveeta cheese.
Add 1 1/2 cups of salsa, 2 cups of shredded chicken, 1 teaspoon of cumin, 1 teaspoon of chili powder and salt and pepper to taste. Serve the soup with shredded cheese and fried tortilla strips.
To make chocolate chip cookies, combine 3 1/3 cups of flour with 1/4 teaspoon of salt and 3/4 teaspoons of baking soda. Beat in 1 1/4 cups of brown sugar with 1/2 cup of granulated sugar and the melted butter from 2 sticks. Slowly beat in 2 eggs and 2 egg yolks. Add 1 1/2 tablespoons of vanilla extract and 1/2 cup of peanut butter.
Combine the wet and dry mixtures until smooth. Fold in 11 1/2 ounces of peanut butter chips, 1 cup of chocolate chips and 1 cup of walnuts. Use 2 tablespoons of the dough per cookie, and place the cookies on a greased baking sheet. Bake for 12 minutes at 325 degrees Fahrenheit, and leave the cookies on the sheet for 10 minutes before removing them.
