Some popular Julia Child recipes include beef bourguignon, salad Nicoise and French potato salad. Other favorites include brioche, chocolate and almond cake, and gateau Paris.
To make Julia Child's salad Nicoise, sprinkle 1 head of Boston lettuce with olive oil, and combine 1 1/2 pounds of blanched fresh green beans with salt and pepper to taste and a few tablespoons of oil and lemon dressing. Drizzle some of the dressing over 4 cored and quartered red tomatoes and 10 ounces of drained and flaked oil-packed tuna. Spoon 1 quart of French potato salad in the middle of the lettuce leaves surrounded by the beans, tomatoes and tuna. Around the edges of the salad, add 8 halved hard-boiled eggs topped with a curl of anchovy fillet. Toss the salad with 4 tablespoons of capers, 1/2 cup of black Nicoise olives, 1/4 cup of minced fresh parsley, and more oil and lemon dressing.
To make Child's French potato salad, cut 1 1/2 pounds of potatoes in 1/4-inch-thick wedges, and simmer them in salted water for three minutes. Once the potatoes are tender, drain the water, and keep the potatoes covered in the pot for five minutes before seasoning them with salt, white pepper, 3 tablespoons of chopped fresh parsley, 1 1/2 tablespoons of wine vinegar and 1/4 cup of chicken stock. After allowing the potatoes to soak in the liquid for 10 minutes, toss them with 3 tablespoons of olive oil, and serve.
