To make a Jorge's Skinny Muffin, combine 1/4 cup ground flax with 1 teaspoon baking powder, 2 teaspoons cinnamon, 1 teaspoon coconut oil and 1 egg in a mug. Flavor with 1 packet stevia, and mix well. Microwave for 50 seconds.
To prepare the sauce for vegetable enchiladas, combine 1 1/4 cups canned tomatoes, 1 chopped shallot, 1 crushed clove of garlic, 1 1/4 cups of vegetable stock and 1 teaspoon chili powder in a saucepan. While stirring, bring the sauce to a boil. Lower the heat, and simmer about 20 minutes.
Boil 1/4 pound spinach for one minute, then chop coarsely. Add 1/4 cup peas, 1/2 cup diced red bell pepper, 1/2 cup diced carrot, 1/2 a sliced leek and 2 crushed garlic cloves to olive oil in a skillet. Add 1 chopped red chile, and cook for four minutes, stirring. Remove from heat, and add the spinach. Season with salt and pepper.
Divide the filling into quarters. Spoon each portion into a tortilla, roll up, and place in a baking dish. Cover with the sauce and 6 ounces shredded Cheddar cheese. Bake at 350 degrees Fahrenheit for 25 minutes.
