The first step is to mix 1 cup of yellow cornmeal, 1 cup of all purpose flour, 1/4 teaspoon of salt, 1/8 teaspoon of black pepper, 1/4 cup of sugar and 4 teaspoons of baking powder in a large bowl. Next, stir in 1 egg and 1 cup of milk, and hand mix the batter until smooth. At this point the batter is ready for use.
For corn dogs, heat one quart of cooking oil over medium heat in a pan or deep fryer. Add a skewer to each hot dog or sausage, and then coat it with batter by rolling in the batter. Add the coated hot dog to the hot oil, and cook until the batter is solid and brown, which takes about three minutes.
