Make kimchi, a pickled cabbage appetizer, by soaking 14 cups of coarsely chopped Chinese cabbage in 3 tablespoons of salt for three hours and then rinsing the cabbage with water. After the cabbage drains, mix it with 1 1/2 cups of water, 1 cup of chopped green onions, 4 teaspoons of grated and peeled fresh ginger, 4 minced garlic cloves and 1 1/2 teaspoons of crushed red pepper. Refrigerate the kimchi covered for four hours, and serve.
Make ahi poke with raw tuna, and serve it on sliced cucumbers for a finger food appetizer. Marinate 1/2 pound of sushi-grade cubed tuna in 1 tablespoon of low-sodium soy sauce, 1 1/2 teaspoons of peanut oil, 1/2 teaspoon each of dark sesame oil and peeled and grated fresh ginger, 1 minced garlic clove and 1/4 cup of chopped green onions. After chilling the ingredients covered for two hours, serve them on cucumber slices. Another recipe suggests combining the fish with 3 tablespoons of limu kohu, 1 tablespoon of inamona, 2 teaspoons of sesame oil, and 1/4 cup each of minced yellow and green onion.
