Food Network has a simple and easy-to-follow recipe for German potato salad that is popular with site visitors. Bobby Flay's recipe uses grilled new potatoes and yields eight servings.
To make Food Network's German potato salad recipe, preheat the grill to high. Place 3 pounds new potatoes with 1 quartered yellow onion in a large pot with enough cold water to cover, and cook until tender. Drain, discard the onion quarters, and cut the potatoes into cubes. Place the potatoes in a covered bowl, and set aside.
Add 1/2 pound diced bacon to a large sauté pan, and cook until crisp. Remove the bacon with a slotted spoon, and drain on a paper towel-lined plate. Add 1 large diced red onion to the bacon grease, and cook for three to four minutes, or until soft. Add 3/4 cup cider vinegar and 1 tablespoon Dijon mustard, and cook for two minutes.
Whisk in 1/4 cup canola or olive oil, and season with salt and freshly ground pepper to taste. Add the mixture to the warm potatoes, and toss gently to coat. Carefully fold in 8 thinly sliced green onions and 1/4 cup chopped fresh parsley leaves. Season again with salt and freshly ground pepper to taste.
