Popular French breakfast recipes include French breakfast puffs and brouillade de truffes, or eggs with black truffles. To make French breakfast puffs, heat the oven to 350 degrees Fahrenheit. Combine 3 cups of all-purpose flour, 3 teaspoons of baking powder, 1 teaspoon of salt and 1/2 teaspoon of ground nutmeg.
In another bowl, combine 1 cup of sugar and 2/3 cup of shortening. Whisk in 2 eggs. Add in 1/3 cup of milk and 1/3 of the dry ingredients, and whisk them together. Repeat until you mix in 1 cup of milk and all of the dry ingredients. Transfer the mixture to 12 lightly greased muffin cups.
Bake the breakfast puffs for about 20 to 25 minutes or until the tops turn golden, and remove them from the muffin cups. Melt 1/2 pound, or 2 sticks, of butter. Mix together 1 1/2 cups of sugar and 3 teaspoons of ground cinnamon in a separate bowl. Dip the muffins in the melted butter, and then roll them in the sugar and cinnamon to coat.
To make eggs with black truffles, bring a double boiler with water to a simmer. Using a whisk, combine 8 large eggs and 1 ounce of finely chopped or shaved truffles in the top pan of the boiler. Add 6 tablespoons of softened butter. Continuously whisk the egg mixture until it forms small curds, and then remove it from the stovetop. Mix in 3/4 teaspoon of salt and 1/2 teaspoon of ground white pepper.
