To make the ahi tuna steaks, cook 4 chopped shallots, 1/2 cup white wine, 1 tablespoon water and 2 teaspoons lemon juice in a saucepan over medium-high heat. Add 1/2 cup butter, 1 tablespoon thyme and 1/4 teaspoon salt. Allow the sauce to simmer.
Coat 2 ahi tuna steaks with vegetable oil. Grill for four minutes, turn, and grill for three more minutes. Serve with the shallot-thyme butter.
For Almond Crusted Chicken Breasts, crush 1 1/2 cups sliced almonds. Pound 4 chicken breasts, and season with salt and pepper. Dredge the chicken breasts in flour, then dip into 1 beaten egg. Press the chicken breasts with almonds, and place each on a greased baking sheet. Bake for 10 to 15 minutes at 425 degrees Fahrenheit.
Melt 1/4 cup butter with 1 teaspoon lemon juice, and mix in 1 1/2 teaspoons basil. Drizzle the chicken breasts with the butter sauce.
For the angel hair pasta recipe, cook the pasta according to package directions. Saute 2 crushed garlic cloves in 2 tablespoons olive oil, and add 1 cup chicken broth. Bring to a boil, and add 1 pound shrimp. Cook until the shrimp is pink, reduce heat to low, and add 1/4 cup grated Parmesan and 1/2 cup heavy cream with 4 tablespoons lemon juice. Simmer three minutes, and toss with the pasta.
