Popular Filipino recipes include pork adobo, bibingka and chicken afritada. To make chicken afritada, cook potatoes, a carrot and a yellow bell pepper for minutes in oil, and then remove them. Saute garlic and red onion, and add chicken drumsticks. After browning the chicken, pour in tomato puree, pineapple chunks, soy sauce and bay leaves. Bring the stew to a boil, and then reduce to a simmer for 20 minutes, adding the vegetables before serving.
To make pork adobo, combine 3 pounds of pork belly, 1 1/2 cups of vinegar, 1/2 cup of soy sauce, 7 mashed garlic cloves and 8 bay leaves in a pot. Season the mixture with 1 tablespoon of whole black peppercorns and 1 teaspoon of coarse salt, and add enough water to cover the pork. Bring the mixture to a boil, and reduce the temperature to a simmer. After one hour, remove the pork, and sear it in a skillet with 1 tablespoon of olive oil and 3 smashed garlic cloves. Add it back to the pot for another 60 to 90 minutes before serving.
Make bibingka by beating together 1 8-ounce package of cream cheese and 2 cups of sugar before adding 3 eggs. Mix in 3 1/2 cups of sweet rice flour, 1 tablespoon of baking powder, 1/2 cup of melted butter and 1 tablespoon of vanilla, and add 1 15-ounce can cream of coconut, 1 cup of milk and 1 8-ounce can of crushed pineapple. Pour the batter into a greased baking pan, and sprinkle the top with 1/4 cup of brown sugar and 2 tablespoons of sugar before baking the dessert at 350 degrees Fahrenheit for one hour.
