To make pork adobo, combine 3 pounds of pork belly, 1 1/2 cups of vinegar, 1/2 cup of soy sauce, 7 mashed garlic cloves and 8 bay leaves in a pot. Season the mixture with 1 tablespoon of whole black peppercorns and 1 teaspoon of coarse salt, and add enough water to cover the pork. Bring the mixture to a boil, and reduce the temperature to a simmer. After one hour, remove the pork, and sear it in a skillet with 1 tablespoon of olive oil and 3 smashed garlic cloves. Add it back to the pot for another 60 to 90 minutes before serving.
Make bibingka by beating together 1 8-ounce package of cream cheese and 2 cups of sugar before adding 3 eggs. Mix in 3 1/2 cups of sweet rice flour, 1 tablespoon of baking powder, 1/2 cup of melted butter and 1 tablespoon of vanilla, and add 1 15-ounce can cream of coconut, 1 cup of milk and 1 8-ounce can of crushed pineapple.
