To prepare a recipe for Creek Tvklike Tokse, or sour bread, gather the ingredients: 1 pound of white or flint corn, 2 cups of rice gruel, 2 tablespoons of sugar and 1 tablespoon of baking powder. Set these aside and gather water in a large bowl.
Soak the corn in the water overnight or until it is soft enough. Grind this mixture down with a mortar and pestle and separate the coarser grains from the finer ones. Store the coarse grains for later use and reserve the fine corn powder to continue the recipe. Cook a thin rice gruel, and while it is still hot, mix it thoroughly with the corn powder until the mixture is homogeneous. Put this mixture in a large earthenware crock and allow it to settle in a warm room overnight, until the mixture rises to the desired size.
When the mixture is ready, add the other dry ingredients and mix thoroughly. Bake the mixture in the oven at 400 degrees Fahrenheit like any other cornbread and bake for 20 to 25 minutes. After it is baked, allow to cool before serving. Serve it with a salsa dipping sauce or as a side dish with a meat dish.
