To make gingerbread men, mix 1 cup of softened butter with 1 1/2 cups of white sugar and an egg. Then, mix in 1 1/2 tablespoons of orange zest and 2 tablespoons of dark corn syrup. Add 3 cups of all-purpose flour, 2 teaspoons of baking soda, 2 teaspoons of ground cinnamon, 1 teaspoon of ground ginger, 1/2 teaspoon of ground cloves and 1/2 teaspoon of salt, and stir well. Chill the dough for at least two hours.
Next, preheat the oven to 375 degrees Fahrenheit, and grease cookie sheets. On a lightly floured surface, roll the dough to 1/4-inch thickness. Cut the dough with cookie cutter or knife. Place the cookies 1 inch apart on the prepared cookie sheets, and bake for 10 to 12 minutes until firm and lightly toasted on the edges.
To make snowball cookies, preheat the oven to 350 degrees Fahrenheit, and mix 1 cup of softened butter with 1/2 cup of confectioners' sugar. Then, pour 1/4 teaspoon of salt, 2 1/4 cups of all-purpose flour and 1 cup of chopped pecans into the mix, and stir well. Next, roll 1 tablespoon of dough into a ball, and place it on an ungreased cookie sheet. Bake for about 15 minutes or until the bottoms are golden. Roll the cookies in confectioners' sugar while they are still hot and again once they have cooled.
