To make turkey and bean chili, heat 1 cup of chopped red onion, 1/3 cup of chopped and seeded poblano pepper, 1 teaspoon of minced garlic, and 1 1/4 pounds of ground turkey in a saucepan at medium. Make Pat's famous beef and pork chili by cooking 6 slices of bacon in a Dutch oven and stirring in 1 red and 1 yellow chopped bell pepper, 2 diced onions and 4 minced garlic cloves once the bacon turns crispy. Season with 3 tablespoons of chili powder, 1 tablespoon of ground cumin, 1 tablespoon of chipotle chili powder, 2 teaspoons of dried oregano and 1 tablespoon of smoked paprika, and add salt and pepper to taste. Stir in 1 pound of lean ground beef and 1 pound of ground pork followed by 1 cup of beer, 1 can of black beans, 1 can of kidney beans, 1 can of crushed tomatoes and 1 can of diced tomatoes. Simmer the chili for 90 minutes, and serve it with shredded cheddar cheese, sour cream, scallions and lime wedges.
