Chef Ramsay's version of beef Wellington is made with a good beef fillet, chestnut mushrooms, white wine, sliced prosciutto, and a thawed puff pastry. To begin, brush the fillet with olive oil and roast for 15 to 20 minutes, then place in the refrigerator to cool. Chop the mushrooms and pan fry with white wine and a sprig of fresh thyme. Lay the prosciutto onto a cutting board and spread the mushroom mixture over it. Wrap the prosciutto around the fillet and roll into a sausage shape. Drape the puff pastry over the fillet and brush with egg yolks. Bake for thirty minutes or until the beef Wellington is golden and crisp.
To enhance a decadent dinner party, Chef Ramsay's chocolate marquise recipe is very popular. To make it, melt 70 percent dark chocolate, and add egg yolks, sugar, and cocoa powder. Gently fold in whipped cream, and layer the mixture in a tin with After Eights. Continue layering until the tin is full and refrigerate overnight.
