Make a quick baked egg in an avocado by cutting an avocado in half and removing the seed. Place each half on a pan, and slice off a little piece of the skin on the bottom so that each side sits flat. Spoon out a little of the meat to make a large enough hole for the egg to fill. Crack an egg in each half of the avocado, and cook at 425 degrees Fahrenheit for eight to 10 minutes. Top the baked egg with chili pepper, miso butter or herbs, and serve.

Combine 1 3/4 cups buttermilk, 3/4 cup maple syrup, 2 eggs, 1 tablespoon vanilla extract and 1 teaspoon cinnamon. Pour the batter into a baking dish, and add pieces of crustless bread. Cover with plastic wrap, and chill for two or more hours so that the bread completely soaks up the buttermilk batter. Meanwhile, cook 6 strips of smoked bacon just until they begin to get crispy.
Drizzle the bread in the pan with 3 tablespoons of melted butter, add the bacon and crack 6 eggs on top, making sure to keep the yolks intact. Cook at 375 degrees Fahrenheit for 30 minutes.
