To prepare a popular buffalo chicken dip appetizer, spread one 8-ounce package of softened cream cheese in the bottom of an ungreased 1-quart baking dish. To make easy spicy black-bean canapés, combine 1/2 cup black beans and 1/2 of a diced avocado. Stir in 1 teaspoon extra-virgin olive oil and 1/2 of a finely-chopped jalapeño pepper. Season the mixture with kosher salt and black pepper to taste. Spoon the mixture into 24 scoop-shaped tortilla chips, and serve.
To make a classic ham-roll-up appetizer, open a 1-pound package of sliced deli ham, 1 block of chilled cream cheese and 1 small jar of pickle spears. Lay 1 slice of deli ham on a flat surface, and spread the ham with a spoonful of cream cheese. Place a pickle spear in the center, and roll the ham around the pickle. Cut the roll-up in half, skewer the ham pieces with a toothpick, and place them on a serving tray.
