To prepare a popular buffalo chicken dip appetizer, spread one 8-ounce package of softened cream cheese in the bottom of an ungreased 1-quart baking dish. Drain a 10-ounce can of white chunk chicken, and layer the meat over the cream cheese. Spread 1/2 cup buffalo-wing sauce and 1/2 cup ranch dressing over the chicken, and sprinkle the dish with 2 cups colby jack cheese. Bake the dip, uncovered, for 20 to 25 minutes or until the cheese is completely melted. Serve the dip with crusty bread, celery stalks or tortilla chips.
To make easy spicy black-bean canapés, combine 1/2 cup black beans and 1/2 of a diced avocado. Stir in 1 teaspoon extra-virgin olive oil and 1/2 of a finely-chopped jalapeño pepper. Season the mixture with kosher salt and black pepper to taste. Spoon the mixture into 24 scoop-shaped tortilla chips, and serve.
To make a classic ham-roll-up appetizer, open a 1-pound package of sliced deli ham, 1 block of chilled cream cheese and 1 small jar of pickle spears. Lay 1 slice of deli ham on a flat surface, and spread the ham with a spoonful of cream cheese. Place a pickle spear in the center, and roll the ham around the pickle.
