This recipe has three different components: cranberry compote, chocolate crust and white chocolate mousse. Start with the chocolate crust by blending 1 1/2 cups of chocolate cookie crumbs with 1/4 cup of melted unsalted butter. Press the crust into a tart pan, and bake at 350 degrees Fahrenheit for 10 minutes.
While the crust cools, whip up the mousse filling by blending together 3 egg yolks, 3 tablespoons of sugar and 2 tablespoons of cornstarch. Heat 1 1/4 cups of milk in a saucepan, and whisk in the egg yolk mixture. Cook on low for four minutes until the mousse thickens, then stir in a gelatin mixture containing 2 teaspoons of gelatin powder and 3 tablespoons of cold water. Place 8 ounces of white chocolate and 2 tablespoons of unsalted butter in a bowl, then strain the gelatin and yolk mixture into the bowl, stirring constantly until the chocolate and butter melts, and the ingredients are well-mixed. Whip 1 cup of whipping cream, and fold into the mousse. Chill it before pouring it in the crust.
Make the cranberry compote by simmering 2 cups of cranberries, 2/3 cup of sugar, 1/2 cup of water and 2 teaspoons of orange zest in a saucepan. After 20 minutes, mix in 2 tablespoons of brandy and 1 teaspoon of vanilla extract before chilling the compote. Layer over the mousse.
