Poke salad is made by combining the boiled leaves of a pokeweed plant with a combination of flavorings and other ingredients such as eggs, vegetables or bacon.
Pokeweed is a herbaceous perennial plant commonly found in eastern and northern America and grows to eight feet in length. The Pokeweed leaves and shoots are considered toxic. The American Cancer Society warns and recommends people not to consume it in any form.
Experts recommend boiling the leaves for at least 30 minutes to remove toxins. Pokeweeds leaves and shoots are thought to cure inflammatory diseases and are used in the treatment of mumps, tonsillitis, rheumatoid arthritis and glandular fever.
