To make the grilled tandoori chicken with the cucumber-yogurt sauce, gather 1 cup of fat-free plain yogurt, 3 cloves of garlic finely chopped, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander and the zest of 1 lime. Also assemble 1/2 teaspoon of ground red pepper, 1/4 teaspoon of salt, 1 3/4 pound chicken breast, 2 tablespoons of dry milk and 1 tablespoon of ground flaxseed. Finally, get 1 small English cucumber thinly sliced, 2 scallions thinly sliced, and 2 tablespoons of chopped mint.
Combine 1/4 cup of yogurt, spices and lime zest in a zip-top bag to mix the ingredients. Add the chicken to the bag to evenly coat. Seal the bag and refrigerate it for a period of two to eight hours.
