The Pioneer Woman blog has many healthy recipes including herb-roasted pork tenderloin, spicy grilled vegetable panini and pan-fried spinach. Some other healthy recipes are butternut squash and kale stir fry and low-carb lettuce burgers.
Make herb-roasted pork tenderloin by seasoning 2 trimmed pork tenderloins with salt and pepper and browning them in a skillet at medium-high heat for 5 minutes on each side. Season the browned meat with 3 tablespoons of herbes de Provence and place it on a baking pan. Mix 1 peeled and diced celery root, 3 peeled and diced parsnips, 6 diced carrots with 1 1/2 tablespoons of olive oil. Roast the vegetables and meat at 425 degrees Fahrenheit for 20 minutes, stirring the vegetables throughout the cooking time. Allow the meat to rest for 10 minutes before serving it, and top it with a sauce made in a saucepan containing 1/2 cup of water, 1 cup of fig or plum preserves and 1 tablespoon of white wine vinegar.
To make healthy butternut squash and kale stir fry, heat 1 tablespoon each of olive oil and butter at high heat, and mix in 1/2 peeled, seeded and diced butternut squash seasoned with 1/2 teaspoon of kosher salt, 1/4 teaspoon of chile powder and freshly ground pepper to taste. Once the squash turns tender and golden brown, remove it from the skillet, and add 1 bunch of torn kale. Cook the kale with 1 tablespoon of butter for four minutes, and serve it with the squash.
